The only cookbook I ever had was one of those stupid "le edgy" cookbooks someone got me as a gift and I never even opened it, I think it was regifted to someone else.

I just get recipes online, write them down, and add them to a binder. If they're good, I keep them, if not they're gone.

What are your favorite recipe sources?

They aren't. They simply take advantage of the appeal to tradition fallacy.

It's food entertainment first and cooking second. Most people who watch these videos will never actually make the recipe and of those who do most of them won't bother comparing it to anything similar.
They watch some dude rolling out pasta and taking 100 fricking hours to make a lasagna and they believe things must truly be so much better that way without ever having actually tasted the food.

You can also actually see the food in restaurants. Photo/video of food on youtube has often been so doctored it looks nothing like how it would in a real scenario. Even McDonalds garbage looks great when you spend 15 min staging a shot and fricking with the saturation.

    >actual retired/active chefs making videos
    >TV personalities aping cooking
    This is why.

You still get "personalities" on YT who don't know a damn thing, but you can choose between them and actual chefs on YT. TV filtered actual chefs super fricking hard and only showed you the ones that got eyeballs - aka the Gordon-types of the chef world that made for good TV but couldn't cook for shit.

Are they though? I like this guy as he seems like a actual cook, and Chef John is and always will be the GOAT, but good god all the others seem like posers who couldn't come up with their own meal or dish of their life depended on it.

And they all seem to have huge egos over just how skilled they are, you know the type, the 2kool4school types with these fancy edited videos who sound like the most confident person on earth cause they made a puree or some shit. That Adam Ragusa or whatever ihs god forsaken name is comes to mind when I think of these posers who are high of their own farts.

youtube is meritocratic (or at least gives people what they want, cringe and all) while old media is nepotistic

One had to compete against dozens to get the job while the other has to compete against thousands to be successful.
I’m not saying that they are better at cooking but they should at least be more entertaining if they managed to shine in that sea of people.
    This is just logic

Why are Italian chefs and cooks from every single media source you can think of better than anyone else?

In my experience it’s because they have the balls to include their mistakes instead of having the next step premade so they can’t possibly frick up
