      if you're fine with dry wine then no issue, it's super easy. if you need it to be sweetened, you either need to be fine with using a sweetener like xylitol or erythritol that won't restart fermentation and turn your bottles of wine into bombs, step feed your wine until the yeast craps out which will likely be around 18%+, have simple syrup on hand and sweeten to taste in the glass, pasteurize which isn't the best on the home scale, or buy a few filtration setups so you can filter down to a half micron to remove the yeast

      Sulfur candles were used to fumigate wine containers (amphorae and barrels) as far back as pre-classical Greece. The trace sulfites ended up in wine, acting as a preservative.

    Sommelier here, all wine contains sulfites to some extents.

    Beleive it or not white wines like sauv blanc actually have more than red wine. The sulfites cause headaches is just a myth. People who say so didn’t drink enough water and probably had too much wine (after all it is a desiccant; especially red wine hence the drying effect in your mouth)

    Enjoy wine anon, the ethanol content will kill you before the sulfites do.
