    40% of the alcohol is retained when i'm making my vodka sauce? bullshit. i don't feel the least bit inebriated when eating it. also there's just no fricking way that's physically possible. i'm cooking in a pan that's many, many degrees above alcohol's boiling point. it's not surviving in that.

Vanilla is a common example. There are compounds in tomatoes that are more readily brought out by ethanol as well.

    I'm happy to cook with coffee, chocolate, or even tea sometimes. Where do they fall in this assessment? Also I would 100% cook with weed and, say, coca leaves or fresh poppy seeds if I thought the people I was cooking for would be down. Not psychedelic mushrooms though because they taste awful.

    If you add a glass of wine, 120 grams, to a pan and reduce it to au sec, to let's say a tablespoon or 15 g, that's a reduction of total mass to 15/120 = 12.5%. Therefore the amount of alcohol must also be reduced to at least this amount because it boils off along with the water. But the boiling point of alcohol is lower than that of water, so the mass that boils off has a disproportionate amount of alcohol so the percentage retained must actually be less than 12.5%.

    You can achieve any arbitrarily chosen percentage of alcohol reduction by just varying how dry you do the initial reduction before adding rest of the liquid.
