          A grandma slice is thin, oiled, focaccia-like bread. A Sicilian is over an inch thick and airy. Usually the former has crushed tomatoes and parmesan cheese and if there's mozzarella, it's under the sauce. Sicilian uses marinara sauce and low hydration mozzarella which goes on top of the sauce.

              If that's "splitting hairs" then naming any subclasses of pizza is splitting hairs. The only thing Grandma and Sicilian have in common, besides what all pizza has in common, is that they're both square.

    It's just a basic pizza with more dough. And in my experience it's usually undercooked with the dough still being a bit raw in the center.

    It's very popular in Brooklyn. L&B, DiFara, and Luigi's specialize in it and are considered some of the best pizzerias in the city.

      Spumoni Gardens is alright, I live like 5 blocks from Di Fara and I never go there, but plenty of other random pizza places around (the ones run by italian not those dogshit kosher places) here make a great doughy sicilian pie. Problem with the spumoni gardens pie is the dough can be kinda dry and taste more like a cracker than pizza dough; it's still good as frick but it's not my favorite.

    Because Southern Italy always was and still remains a bit Greek. A lot of people there still speak Greek. Pizza is just an evolution of the Greek word pitta ("bread" - Turks use it too). Napoli ("Naples") was founded by Greek people as "Nea Polis", "The New City-State".

    Because 2000 years later everybody had forgotten about bread, pitta and pizza. Until nationalistic crazies lacking meds discovered a red white and green pizza in Naples and promoted it to be the be all and end all of oven-cooked bread with stuff on top.

    Maybe because places don't sell it by the slice like other Ialian joints do. Usually when I see Sicilian pizza sold it's by the whole pie and never by the slice.

          it means they put the cheese on first then the sauce, then they grate a little parm or sprinkle herbs. if it’s a place where they actually care about the sauce then it can be a very good slice
