    here in spain, pretty much every single bakery is in in a big conspiracy, the conspiracy of not baking the bread enough
    gone are the days of actually crunchy brown baguettes, it's the reign of the undebaked baguette now

      If you don't want to ask a bakery to make you an old-school baguette (some will take requests) check out ChainBaker on YouTube, he has many excellent baguette recipes for home cooks

      That's because you are supposed to warm them up again after buying them. Microwave them and they get crispy on the outside and the inside is proper done. Only olds and fats try to eat the baguette on the spot.

    it can't compete with ciabatta if we're talking about the real thing.
    the difference is even bigger with store bought industry baguette vs ciabatta from lidl for example. big stores and chains really suck at making baguette

        Bread is super monitored in france, you can't add anything but salt yeast flour and water, but the trick is, you can always change little things in the flour like gluten content, how it's refined or some shit

        you can tell it a no good baguette by the shape, it's too even, it's machine crafted, not by han, and by the way the crust cracks crumble, you just know it's a cheap, probably frozen ready to bake bread, also, the color, it's too pale

        there is a quote in the movie '' ratatouille' when colette tell that '' you can tell a bread is good without tasting it, just by listening to it, and i don't even need it in this case
