I think there is simply no need when there are good Mexican spots on every corner in my city. Why would I even go to Taco Bell or del taco when Tacos El Compita #2 is cheaper and better in every way? There is no need to franchise, as the market is already tapped by Roberto’s, Rigoberto’s, Fernando’s, Tacos Goku, Ranchero Burritos, etc.

We believe that the guy doing the cooking is a very important part of how food gets its flavor, unless you clone the guy there is not way of maintaining the taste that made your place famous to begin with.
Thus, most places only have one location, with only a few branching out into two or three locations, usually managed by very close friends or family. Trying to achieve a standardized level of flavor a tase among manny locations is impossible under this way of thinking.
Lots of Mexican places basically are fast food, and a ton of them are chains. The place I usually go to literally has a drive-thru, and there are like 15 other locations throughout the state.

all across the southwest there are regional chains with pretty authentic mexican 'fastfood' ive seen some here or there that have 30+ stores across an entire state and beyond. some cities will have the same restuatunt in like 10 locations across the city and another 5 across neighboring towns
