Wild duck breast recipes

A coworker gave me around 10lb of wild duck breast. The only thing I've ever prepared with it was seared duck breast with a port wine reduction. That was fantastic but what other recipes can I use with them? The fat has been removed from them

        I don't have any experience with mallard. It works with probably almost any brown sauce out there and maybe even some game sauces.

        Game meat sucks. At the very best it's comparable to shitty beef. My neighbor tries to give me deer every season and I tell him my freezer's full.

    seared is the best preparation for duck breast. overcooking gives it a livery taste. you want high heat +short cooking time.

    for variation in flavor you can add different seasonings and garnishes, but high heat searing is simply the proper way to cook

    Portuguese style duck rice. Only thing is you don’t have the bones to make the broth to cook the rice in but that’s ok, it’ll still come out fine.

    admittedly I have no experience with duck hearts, but I do remember an anthology cookbook from danish chefs each submitting an omelet recipe that I love, and one of the more challenging recipes I never made called for "pickled duck hearts". I don't know the process for duck hearts and couldn't find a good answer, so I called it quits, but if you want to experiment here is a screenshot combined with a google lens translation and some corrections, showing the recipe for an omelet using (pickled) duckhearts.
    also doesn't seem to exist anywhere on the open web so bonus points for being forbidden cooking knowledge. can hard vouch for some of the other recipes in the book so I'm inclined to believe it's tasty

    Seared with port reduction is top tier as is. I prefer simple and rustic. I would eat all 10 lbs sauteed with pearl onions and tarragon, mixed veggies on the side.
    If you've got some fresh veggies and want to make dough, a duck pie might be really nice.
