I started browsing this board roughly a week or two ago and there's a common trend I've been wanting to ask about:
Why are YouTube chefs so hated on this board? I've seen a vast majority of them get an extreme amount of hate and I'm not sure what they did to warrant it. I'd love some insight on the situation.

            I hate YT garbage, but Chef John is the most consistently respected and recommended youtube guy on Culinaly going back at least a decade. It's literally not possible for you to have been here any decent amount of time without knowing who that is. I'm not even recommending you go watch him. I have some major issues with a lot of his videos. But of fricking course I know who he is because I've actually been here longer than you.

      this reminds me. the best chinese I've ever had was this random shithole in a random suburban strip mall ran by a family. dad is the cook, mom serving and working the phone. son helping out on weekends. they made everything from scratch, amazing sauces on their dishes. they put a lot of effort into their food and it was ridiculously cheap. went there for years I hope its still there

    If you go back to pre-2016 there was no problem with youtube threads because people (for the most part) only talked about channels that were all about the food and cooking. Nobody posted Jack (Joey actually preceded Jack; that's when things started going downhill), nobody posted fricking Ramsay garbage, and nobody just blatantly shilled and posted "hurr durr, it's up!" with a YT link and thumbnail. These days it's all about the personalities, not the cooking. It's the worst thing that's ever happened to the board, and it all comes from the redditors who filtered through boards like /misc/ and Culinaly.

      This right here is were most of my hatred for YT shit comes from. There's this bizarre idea among newbies that this board is exclusively a cooking board, and they hate any thread about food that isn't actual cooking. Except they don't cook, and typically can't cook; they watch YT videos in place of cooking, and if they do post their cooking they unironically get mad at any discussion about technique - even if it's constructive criticism. These people don't actually want to talk about food and cooking. They want to larp as "I can do it better than any restaurant" home cooks while in reality they can't, but they've seen someone do it on YT and don't understand that's not real life, and what they really come here for is entertainment and food porn. It's this bizarre self-righteousness when they contribute absolutely nothing and seethe at the thought of anyone taking an active part in creating original content here.

        There's room for all kinds of content on the board. But when it comes down to it, all boards are loaded with shitposters that want to rage at everything. That's kind of the nature of an anonymous board. We have a few good people that post cook alongs.

        I come here for both. But yesterday, I counted them. 10 active threads about pizza. Not a single one about making pizza. The content gets stale. At least people discussing techniques seen on YT, or debating kitchen tools has some value. I've been working in kitchens for over 25 years.

        I appreciate shitposting threads. They're why I come here. But I'm more likely to get involved in a discussion about cooking. They're the tabs that get left open. There is absolutely room for both. All I was trying to say is that there is no reason at all to hate on YT threads.

          And this is all I see every time I open the catalog these days. This isn't even that bad, but the board is 90% bot posts during non-American hours, so whatever... In any case, we have constant homemade pizza threads, and they are ALWAYS stale. Either it's one of the same handful of anons who make the exact same, kind of mediocre pizza (and then get mad at any criticism and will just call everyone jealous for not shelling out $800 on a pizza oven, or it's just a generic "gib me ur best pizza dough recipe nao!" threads which always go nowhere because of fricking course.

            Clearly we have different taste in threads. Which comes back to, "Both are fine". This is all coming from my original statement that most people on this board post about pizza and soda. My gripe about 10 threads about pizza is more raging about people not checking the catalog before starting a thread than the threads themselves.

                All things take practice, I used to post my efforts to learn making various French cakes or pastry here years ago and people just b***hed and moaned about how hard it would be to do themselves.
                I used to also post pizza threads about how to do everything but once again people b***h and moan about effort or money to be spent on materials/cooking devices.
                So I stopped, why post things if no one has anything to say other than complaints, most of which aren't even directed at the food.
                Honestly this place is more bitter and needlessly combative than ever before in the past and it shows in the vastly decreased posting quality.

                This is the other main problem with these youtube home cooks. On the one hand, they think cooking is really easy and they can make better food than a professional after watching a video or two (literally the post above you), while on the other hand they HATE when anyone posts any OC that they think is too complicated for them to pull off themselves. People lose their shit over the most basic b***h stew, and then they'll get mad if you make basic suggestions on how to build flavors like sweating the aromatics and caramelizing the tomato paste, and will scream that "IT'S JUST COMFY STEW IT'S NOT SUPPOSED TO BE COMPLICATED IT WAS REALLY GOOD STOP BEING MEAN!" (To be honest, though, I think most people just find baking kind of boring.)

                Anon, two thirds of Culinaly doesn't care about cooking and is actively hostile towards it. Probably half the board comes directly from Culinaly and /misc/, and views food solely as fuel, and would just take a pill twice a day if it would fulfill their nutritional "requirements". People act like this is normal across 4chcan, but I don't know of any board that hates its subject matter as much as Culinaly.

                Add less batter, keep the molds in the fridge before you fill them with the batter, bake at a higher temp, put a pizza steel or stone under the pan that holds the molds.
                Idk about your recipe but I use a chefsteps recipe that doesn't use egg whites and I seem to have good luck with it.

                I use a steel but room temp molds I'll try less next time. They still taste good and I'm using the recipe from the Ferrandi book.

                Then I fill the molds to around 1/3 of an inch from the top then bake them off.
                You can carefully pop one out to peek at the bottom at the end of baking, as long as you don't invert the mold to remove the test canele you can return it to the mold to continue baking if you have cul blanc.

        Some videos are like that. Sure. But not all. His videos on making syrups, or on essential barware are quite good. I mean, any channel that wants to make money is going to ham it up in most of their videos. It's what gets views. You just ignore the videos that don't look like they'll be useful to you. If you are going to YT, and expecting to find any regularly updated channel that isn't chasing the algorithm, you're going to be disappointed.     Some of the channels I frequent are rightly deserving of some hate. Like Chef James Makinson. His popular stuff is all reaction videos to bad cooking vids. There's no real value added. He does however at least talk about how to improve on what is seen in the video. His actual tutorial content is great, but the view counts are depressingly low. I can see why he does far less of them these days. It's a lot of effort for far fewer views.

      Well the main one I watch(ed?) was Babish because he had a cool concept. I stopped watching as much because Alvin and the others are just terrible as hosts.
      I also tend to watch You Suck at Cooking and Adam Ragusa but not nearly as often.
      I used to be a big fan of the "But Better" series [I forget the guys YT name] but for some reason I just stopped being interested in it.
      The episode he got curb-stomped by Crumbl was pretty funny though.

      Love him. Makes most recipes seem super approachable and easy, and his food challenges basically led me to cooking like "ok, this should probably work" and not actually following any kind of specific recipe in particular and making something work out without following strict guidelines has a weird kind of charm.

    Papercuts777 aka The Drunk Chef was my go to. I've been coming here since before the BA meltdown and that whole fiasco. BA content used to be popular on here years ago; Claire threads, Brad threads, Sola hate threads, you name it. Also, though not related, I used to really enjoyed the depressing alcoholism threads. It was like an AA meeting on /ck. Jannies ruin everything they touch.

      First of all, that wasn't "years ago". That was very recent... Secondly, that was the most blatant case of paid advertising we've ever seen on this board. That shit wasn't popular. The core base of Culinaly hated it. It was a literal bot post based on the exact same template made every other day, 5 minutes after a new video came out, even if the last 2 threads were still up. AND THE MODS NEVER DELETED ANY OF THEM. BA threads and the cat blog was probably the lowest point Culinaly has ever seen, and it's never going to recover from the damage that took place over that year and a half.
