We had 2 pizzas. Kielbasa, pineapple and jalapeno pizza + kielbasa, red onion pizza w red sauce grilled on pizza stones
Still full from lunch. Had an enormous bowl of soup. Five, 100g+ servings of vegetables in this one bowl. I'll probably have some sort of green salad later and call it a night.

Actually my dude you should try this Kenyan recipe called Sukuma Wiki. It's just a pile of collard greens with some ground beef, tomatoes, and onions. Also is cash over some rice.

I'm surprised I like the big chunks of onion as much as I do, but I also like big chunks of raw onion on my chili so there's that. I buy the sweet yellow onions.

Some pretty shit nachos.
Cut the onions up smaller next thing and remove some of the seeds rather than leaving them all in. You're gonna be feeling too much heat to taste anything.
They're pickled jalapenos my guy, the seeds have lost a lot of their punch. Fair point on the onions I was feeling out of it after the third hour of my 3 year-old shouting "but I don't want to" because I told her she wasn't getting any more snacks and she needed to eat her supper if she was hungry. The supper she asked for.

This is good but I often find myself getting hungry again sooner than I would like. I think it’s because there’s basically no fat here, just protein and carbs. Any recs on how to add some fats to this dish?

Cheese is a really easy way to just add fat. Maybe stuff the chicken breast.
Cover everything in butter or have a side of lard toast
When I make stuff like that I'd always make a side salad with avocado and spinach or arugula. And with just a light olive oil and salt/pepper dressing
Assuming you are trying to eat healthy and mechanically that is prob your best bet
