Any simple and easy vegetarian ways to eat buckwheat groats? With rice i can make simple egg fried rice, but it doesnt quite suit buckwheat i dont think. Im not a fan of mushrooms, but other than that im fine with most of things.

In my family (Ashkenazi) we make buckwheat kasha varnishkes, which are groats fries with onions and butter, served over lokshen. Sometimes we use schmaltz which isn't vegetarian, but mostly just butter. It's a side dish, you can mix it up!

I ate what cooked buckwheat i had lightly fried with onions, cherry tomatoes, dollop of sour cream and a sliced pickle. Was honestly pretty good.
cook your buckwheat as you're used to. When it's done stir in minced garlic, marjoram and ground young sheep cheese. With additional fried bacon + onions it's a legit dish from the Czech/Slovak border region but it'll be pretty good just topped with some nice fried onions, or perhaps a base to add one more ingredient to. Search "pohanka s brynzou" for more inspiration.

the original is called brynza, a local variety of sheep cheese that is not matured. You can look up its alternatives, some say that feta is close but I'd always check what local producers have to offer first.

Fry up some bacon and then fry the buckwheat in the rendered fat.
Add chopped vegetables that you like.
