Avocado fudge recipe as base, but switch for sweet potatoes?

Does this seem feasible?
Here is the original recipe:
2 medium avocados
1 small banana over ripened
2/3 cup coconut oil measured melted
1/4 cup honey or maple syrup
1 tsp pure peppermint extract
Pinch of salt
3-4 tbsp cacao nibs optional

Looking to replace the avocado with sweet potato, the mint with vanilla, and the nibs with chopped and blitzed nuts.
I'll also be adding a little cinnamon
Basically just using the avocado recipe as a starting point.

    I wouldn’t consider it fudge but it’ll definitely be delicious. Are you planning to use previously baked/roasted potatoes?

      I just have some sweet potatoes hanging about. I'll steam or mash them. The recipe is essentially "puree it all together and poor into pan, then freeze/cool

    Update: just blended it all together. I used honey instead of maple syrup. I will be letting it freeze for three hours. Used half a can of pumpkin puree and a whole sweet potato
    The combined puree tasted pretty good. Pumpkin taste was strong but the sweet potato and honey were still there.
    Topped the mix with blitzed pecans

      It won't be the same. Avocado is way more fatty and less watery. Make sure you get as much water as possible out of your sweet potatoes and add extra oil.

      I bet when this is frozen it won't be like fudge, it'll be Frozen like a fricking rock because of the water/fat issue

        This is why I asked for suggestions prior. No matter, nothing to be done about it. I boiled the potatoes and mashed them before the blending, so we'll see

      Thankfully, it was not rock hard. Too the contrary, for storage, it must be kept frozen, I can already tell. I was able to cut it with a butter knife

      I would not say it's overly sweet. Moreso a good mix of savory and sweet. I could have added a full tsp of cinnamon, I think. I only eyeballed a half tsp.

    I don't get why you'd use avocado. If you're being a vegan I'd use cashew or almond butter or whatever for this. Sounds like a recipe that's better if you didn't know the ingredients.

      I saw the one thread somebody posted here about avocado and chocolate smoothies. I got to thinking

      So I googled avocado desserts, realized my avocados were bad, then subbed for sweet potatoes and flavors that made more sense for sweet potatoes

    I know u already made them, but peppermint? What in the world? Idk would almond have not been better or something? And maybe some more nuts/nut oil?

      The original recipe was a chocolate mint-type thing. As I said, I substituted the peppermint extract for vanilla
