      Chili con carne is traditionally chunks of beef and/or pork stewed in chili peppers. It's a much better meal with the addition of onions, garlic, and black/pinto/kidney beans but since Texas is the fast food capitol of the world they can't eat any meal without ground beef in it.

          Nobody that is pro bean does not also use meat except for some off meta vegetarian variant. It's just trolls shitposting because muh traditional chili is beef and chili and salt and nothing else. Obviously this would result in some bland dogwater so nowadays you add garlic beans onions and a bunch of spices like cumin koriander oregano paprika and other stuff. Now those shitposters wouldn't eat their traditional dogwater chili either so they do add these items but to retain their ebin contrarianism they picked the beans to single out and you see the results of that in online chili discussions. For me beans add a nice taste and more important some varied textures so I always use them.

    A good chili should be made with diced beef chuck roast, not ground chuck, ground beef, or worst of all ground turkey. Beans are optional, but definitely recommended. What is not optional though is a large amount of fresh, dried, and/or canned chilis, as many varieties of pepper as you have on hand.

    50/50 beef and ground pork Browned
    2 cans of tomatoes
    Half can if tomatoes paste
    A bunch of fresh chili's, hot ones if possible
    Couple of finely diced yellow onions, sautéed
    Can of anchovies
    A whole head of garlic, chopped
    Pepper, chili powder and a very small amount of cinnamon
    Simmer on low for 3 hours

    At it's core, chili is meat, tomatoes, and spices. That's it. Everything else you wanna add is fillers. Does adding beans to chili suddenly make it not chili? Of course not, that'd be like saying adding toppings like cheese, jalapeños, green onions, and sour cream magically makes it not chili. But your tolerance of the fillers might range from beans to noodles to potatoes; personally my tolerance is 0 so I don't add any of that shit. Idgaf what you do though.
