Do the deviled egg thing but then add curry powder, garam masala and sriracha. You don't need much of those unless you really want it to taste like Indian food. Also add some celery or jalapeño or something for a little crunch. This works really well with chicken salad too. Oh and I almost forgot, add some celery seed. Celery seed in egg or chicken salad is really tasty.

I do warm egg salad with lao gan ma chilli crisp oil, cheddar cheese and chopped green onions. Add a small amount of crispy bacon.

Traditionally you can add cress/watercress. Other good options are chopped anchovies, olives, some sort of allium like chives or spring/green onion. Or go meat and add fried bacon or sausage. A little strong mustard in the mayo doesn't hurt either.

Really an underused ingredient too. You'll rarely regret throwing it on any sort of sandwich or salad where you need a peppery taste to cut through things.

Coronation (chicken) is way better without raisins/sultanas and indeed the original recipe didn't have them either. It's just an unpleasant texture and I'd suspect probably comes from the 70s and their weird obsession with fruity curries. Otherwise solid advice.
In the USA it's not that uncommon to find chicken salad with grapes and nuts added. It's not bad. Raisins would be too chewy though like you said, maybe try fresh grapes if you're curious.
