      It's ground pork shoulders. A lot of cartilage and connective tissue that's been boiled hard and ground into mush then mixed with just enough actual ham to make it edible. The name itself is a portmanteau of shoulder pork and ham. It was invented as a way to turn a waste byproduct into a marketable product.

      It's pretty good sliced thin and fried on bread with mustard, or in an omelette. You probably shouldn't feel good about eating it, though.

                It got popular in Hawaii because it's harder to raise livestock there and it's hard to ship meat-raised land from the mainland before it spoils. We didn't always have trans-continental jets shipping shit around all the time so you had to make due. It all grew out of that. There might actually be more Japanese people in Hawaii than actual native Hawaiians so there's that shit too. How it get picked up as some sort of semi-refined bullshit thing.

                I don't think even in Hawaii it's considered "gourmet". Awareness about processed meat is actually way more prevalent in Asia than in the USA it seems; we eat more "whole foods" and much less fast food and TV dinners.

                I think OP confuses allowing an occcasional unhealthy treat with thinking "this is gourmet shit"...

    In the Philippines during the war with no power and no refrigeration this shit will sit on a shelf for years and be good.
    You can fry it, boil it, eat it straight from a can, mix it with rice, deep fry it, put it on bread, etc

    From my understanding it's in Asia more something that just stuck around after loads of it were dumped on poor, malnourished civilians after liberation in ww2, who had no refrigerators and mostly lived in warm weather areas where the appeal of shelf-stable meat is not very surprising.
