        The garlic sauce at doner places is usually toum, which is basically aioli. Also cacik and tzatziki are the same thing, the only difference is that the cucumbers are chopped in cacik and grated in tzatziki.

        Gyros is tzatziki which is 10% fat yoghurt, grated cucumber that has been salted and wrung to get rid off the water + garlic. Olive oil, lemon juice, mint or dill are also often added.
        The garlic sauce at döner hubs is also often rather oily and contains no cucumber. So probably just yoghurt, garlic and then watered down with (neutral) oil and water. You can be glad if you get actual cacik.

        Good actual greek tzatziki:
        fattest yoghurt you can find
        grated salted cucumber
        lemon juice
        olive oil
        half of the countries reserve of garlic gloves
        salt/pepper
        fresh mint is a very nice thing to use too.

    depends where you are. Greeks have the cucumber yogurt, then they use a type of garlic aioli at some kebab places. Depends what you want it to taste like.

    Tzatziki is the tangy yogurt sauce, Toum is the lebanese garlic sauce. It's basically garlic mayo without the eggs.

    Mayo + fatty yoghurt in a 2:1 ratio, crushed garlic, finely chopped parsely with some sweetness added (i use ginger syrup) seems to approach it quite well (the Dutch version at least).

    Greek souvlaki sauce, mix up some chopped up cucumbers, parsley, dill, garlic and greek yoghurt (not the sweet shit) and squeeze in some lemon juice. Farrrrken beyoooootiful moite.

    Kebabs are more of a roasted garlic/ humus mix i go for shit's frickin sick ulleh.
