Vegan/Gluten free cake

My friend is having her birthday on Sunday and i would like to bake her a cake
She is vegan and cannot handle gluten, so i ran out of cakes (outside some basic poundcake)
All recipes i see either require a chemistry set or looks like shit.
Plus points if it can stay long without refrigeration

    I like oat flour for pancakes. Try making a test cake with oat flour and bake-able egg substitute (like aquafaba). A cake with oat flour, baking soda, baking powder, vanilla, coconut oil, sugar, and whipped aquafaba folded in might work. I'm just brainstorming here. The way I'd go about this if I was actually trying is to find a decent gluten free cake recipe and then substitute the eggs, butter, and milk with vegan alternatives.

      I should add that it's much easier to substitute for vegan ingredients than it is to trial and error your way into a decent gluten-free recipe, atleast for things like cake and bread.

        I've never actually tried baking with it, I was just suggesting a whipable egg substitute that can be folded in to increase volume and fluffiness.

      Why are these lumped together? Veganism is a lifestyle choice, essentially a religion. Gluten allergy affects a microscopically small portion of the population and for everyone else it's a health fad with no health benefits.

      Oreos are full of seed oils.

    Does it have to be a cake, or can it be a pie? Gluten free pie crusts are substantially easier than gluten free cakes.
