What is the best way to go about disposing marinade and rancid oil? I'm told that it's okay to dump it into a trash can, but I'm not comfortable with dumping nearly a gallon of liquid (I was deep frying) into a thin trash bag. Is there a better to go about doing it?
double, triple bag it? Soak it up with paper towels then throw those away? Give it to a Chinese restaurant? Give it to a hippie commune that uses bio-diesel to power their VW bugs?

Inspectors come back after a couple of weeks and check you've bothered to make the improvements they recommend. They don't just shut you down straight away unless you're going full moron and have rats or roaches everywhere and the cook is wiping their ass with chicken breast. All they need to do is replace the oil the day before and do whatever else they said and they're set

I bought one of these lidded funnels that fit on soda bottles and pour it into that.
I live high enough up in my building that I just fling it out the window and it cools in the air so there's no danger

I think places that accept used motor oil will also accept cooking oil. Which means most auto parts stores.

i store the grease in a tin and when it gets full i wait until the early hours when im drunk and then dumpvthe oil down the local rain water collection of my area
I normally wait for it to cool and the pour it into a ziploc freezer bag and put that it the trash zip side up.
If you can, just burn it on an open flame. If you're a city cuck that's a problem, save it up in like a glass container and then take it camping and dispose of it in the fire.
Can opener to the top of a pop can, stuff with a few paper towels, pour in grease/oil, fit lid back over top. I suppose you could suran wrap it if you're worried.
Small quantities like a few cups can be buried in the garden. That much though I'd just stick it in an old milk bottle and chuck it in the bin.

If you had no reliable jar you could put it in a less suitable container with kitty litter which will absorb it
My neighborhood has a drainage ditch and I just pour any rancid stuff in there. Like if I make a stew and I forget it in the crockpot, I'll pour the rancid stuff out. Same with oil.
But if you don't have a drainage ditch, you can order these things that solidify the oil and you can just toss it normally.
