Roast them in a hot pan with a bit of oil for like 5 minutes and add whatever shit you enjoy. Onion/shallots, garlic, parsley, smoked paprika etc. Once you're done you can either eat them like this or add some pickled onions or sour cream once plated. Filling, cheap and quick to make.
Some butter in a pot, half a small onion diced, couple cloves of garlic diced, saute garlic and onion until soft, drain Chick peas, dump into pan add some pepper, chicken soup mix, some oregano, add enough water to cover about two or so inches above, slowly simmer.
After about an hour, take some chickpeas out mush em up, add back in, squeeze in some lemon and I like to add about half cup of feta cheese and mix well.
what's that? we grow a lot of tomatoes and bell peppers, so my parents like to cook them in a giant pot and can them all. tastes kind of bitter though, not sure what to do with it

i cook for a few people now and i have a sad sense of empathy for singles who have to cook for themselves, its expensive and boring. literally cheaper to buy takeout.
it's so hard for me to buy veggies because i can't eat them before they go bad. head of lettuce? fricking hell you have like 2-3 days to eat lettuce and I'm barely ever home.
maybe I need to buy a juicer or smoothie machine and just turn everything into a liquid before it goes all punky

i got fed at work a lot so it wasnt super crucial to make meals but yeah buying fresh produce was just so useless because i was never at home. its depressing seeing vegetables rot in your fridge

I made my own beef and marinara sauce via pressure canning in 2022. But I honestly prefer plain canned beef and tomatoes separately and then combine them later. The flavor is superior and it gives you more options down the road.
